History

Castel de Paolis is the estate that gave Frascati back its ambition. Giulio Santarelli bought his first plots at Grottaferrata in 1974 and, in 1985, founded the winery with the viticultural scientist Attilio Scienza, trialling dozens of grape varieties on the volcanic Castelli Romani soils. Moving to low-yield, high-density planting, it turned Frascati from a simple table wine into something serious, and its whites, led by the Frascati Superiore and the Viognier-Malvasia Donna Adriana, are among Lazio's finest.
