After years consulting for Valpolicella estates and working alongside his father-in-law Giuseppe Quintarelli, Celestino Gaspari founded Zýmē in 1999, converting an old sandstone quarry into a cellar. A creative Amarone house, it is known for the multi-grape red Kairos and for benchmark Amarone della Valpolicella.
