History
Paraschos was founded in 1998 by Evangelos Paraschos, of Greek origin and a winemaker in San Floriano since 1979, a stone's throw from the Slovenian border in the Collio.
Drawn to macerated 'orange' wines, from the early 2000s he devoted the estate to skin-contact whites; in 2003 Paraschos became the first Collio winery to vinify its whole production without added sulfites, fermenting spontaneously in open vats with no temperature control.
